Any 18-series (Special Forces), 17C (cyber operations), and 89D (EOD / Explosive Ordnance Disposal) all come to mind. All of them have very long and difficult training pipelines with high attrition rates.
Army Green Berets — "Special Forces"
Notably, Green Berets have some of the toughest initial training in the entire military (at the risk of drawing the ire of SEALs and Marine Recon). Their initial test lasts an incredible 24 days, and that's just to see if you can attend the Green Beret qualification course.
It's physically demanding
While staying fit and sharp could be considered a perk of military service, it doesn't come without a cost. The training is incredibly rigorous in the military, the days start early and can be exhaustive. The physical demands of the job can take a toll on your mental health as well.
For me, that hardest part was being away from family and at times having to miss important events. The training, etc, only feels hard at the time. But I look back on it all in positive light. However, you can never get back the things you missed out on.

Age Requirements for Active Duty Enlistees
In general, the Defense Department restricts enlistment to those 35 and younger. Prior enlisted service members can subtract their previous years of service from their age in order to extend eligibility. For example, the current age cutoff in the Air Force is 39.
According to 10 U.S.C. 504, any person who is a convicted felon is prohibited from enlisting in any military service. However, you may still enlist for military service if you secure a felony waiver. The waiver request is not automatic, and approval depends on a case-by-case basis.

Marines (not bashing you guys) have the highest Physical Training standard but on average need a low ASVAB score, then army with more lax PT and higher ASVAB, Navy/Coast Guard with a easier PT but much higher ASVAB, Finally the Air Force which is the easiest PT but requires the highest Average ASVAB score.
The safest military jobs are the non-combat roles and traditionally cover administrative and support, legal and medical. No job in the military is totally safe as you can always be deployed to a combat role if this is your career choice. Many of the administrative roles are non-combat and are carried out at the base.
